This delicious Chocolate Chia Pudding is diabetes friendly and heart healthy. It is made from chia seeds, cocoa powder, milk, vanilla extract, and sweetener.

Ingredients
  

  • 3 tbsp chia seeds
  • 2 tbsp cocoa powder unsweetened
  • 2 tbsp sweetener
  • 1/2 tsp vanilla extract
  • 1 cup almond milk

Instructions
 

  • In a bowl, combine the cocoa powder, milk, vanilla extract, and sweetener and whisk until smooth. Mix in the chia seeds until they’re evenly distributed.
  • Let the mixture sit for about 5 mintues. Then stir it again to make sure that any clumps of chia seeds have been dissolved.
  • Transfer the mixture to a jar or to a bowl and cover it with a plastic wrap. Refrigerate overnight.
  • Take the mixture out of the refrigerator and give it a good stir. Add all of your favorite toppings and serve.
