Diabetes-friendly roasted broccoli and cauliflower

This roasted broccoli and cauliflower recipe is more than just a delicious side dish; it’s a nutritious addition to your diabetes-friendly meal plan. By combining wholesome ingredients like broccoli, cauliflower, and garlic with simple seasonings, you get a flavorful dish that supports your health goals.
Prepare the Oven and Pan: Preheat your oven to 400°F and position the rack in the center. Lightly spray a sheet pan with oil.
Season the Vegetables: In a large bowl, combine broccoli and cauliflower florets with olive oil, garlic, kosher salt, black pepper, breadcrumbs, and half of the parmesan cheese. Toss well to evenly coat the vegetables.
Roast the Vegetables: Spread the seasoned vegetables in a single layer on the prepared sheet pan. Roast for 20–30 minutes, tossing halfway through, until the florets are tender-crisp and browned on the edges.
Add the Final Touches: Remove the vegetables from the oven and sprinkle the remaining parmesan cheese on top. Serve immediately while hot.
