Ingredients
  

  • 2 tbsp olive oil
  • 1 large yellow onionĀ  diced
  • 1 large carrots diced
  • 1 large bell pepper diced
  • 5 cloves garlic minced
  • 1 tsp chili powder optional
  • 1 tsp ground cumin
  • 1 tsp oregano
  • 2.25 cup dry brown lentilsĀ 
  • 6 cup vegetable broth low sodium
  • 2 can diced tomatoes
  • salt to taste
  • 1 dash pepper
  • 1 large lime juiced

Instructions
 

  • Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat. Add the diced onion, carrots, and bell pepper, cooking for about 4 minutes until the onion becomes translucent.
  • Stir in the minced garlic, chili powder, cumin, paprika, and oregano. Cook for an additional minute, stirring constantly to release the spices' aroma.
  • Add the dry lentils to the pot and stir well for another minute. Pour in the vegetable broth and bring the mixture to a gentle simmer. Cover partially and let it cook for about 15 minutes, or until the lentils are tender but not mushy.
  • Stir in the canned diced tomatoes and let the soup cook for another 5 minutes, allowing the flavors to meld together.
  • For a creamy texture, blend about half of the soup in a blender until smooth, then pour it back into the pot. Stir well and adjust seasoning with salt, black pepper, and lime juice to taste.
